Ostrich meat is a red meat that is similar to beef in taste and texture. Ostrich is a very lean meat and is best cooked rare to medium rare at most. Ostrich can be used as a substitute for most meats, and grills much the same a lean beef.
The ostrich skins are also saved and made into high quality leather.
