The Game Meats Company processes a small number of emu’s each year. These emu’s are processed between January and April, as the body fat yields are maximized at this time of year.

The body fat is further processed off site to produce emu oil and other related products.

Emu meat is high in protein, low in fat, and has double the iron content of beef. Emu meat has a deep red colour, and is best served medium rare. Emu can also go well with the right marinade.
